Think you know cocktails?
Meet Hayley Buckle, whose online mixology tutorials brought solace and cheer to hundreds of people in Petersfield and further afield on Friday nights during lockdown.
Hayley riffs on rum with Kate Fairweather and conjures up the Caribbean to her kitchen for their friend, Simon Stanley. Ever considerate, she even recommends a refreshingly light version! Could we ask for more?

Two versions of the Pina Colada, a Caribbean classic
The classic Pina Colada
- 50 ml premium white rum
- 2 bar spoons (tea spoons) caster sugar
- 75 ml pineapple
- 35 ml coconut milk
- ice
Put all ingredients into the Nutri-bullet (or blender) for a couple of minutes. You’re looking for something like a slush puppy in terms of consistency…if you remember those!
Pour into a milkshake glass. Decorate with two pineapple leaves and a triangular piece of coconut (see below, rather lovely example).

A refreshingly light (healthy alternative) Pina Colada
- 50 ml premium white rum
- 3-4 cubes of fresh pineapple
- 2 spoons caster sugar
- 75 ml pineapple juice
- 35 ml coconut water
- shake in cocktail shaker
- cubed ice
Crush 3 or 4 cubes of fresh pineapple in the bottom of a cocktail shaker.
Add sugar and muddle together. Add pineapple juice, coconut water and shake.
Strain over over crushed ice into a milkshake glass.
