Simon Hawkins of Hawkins Brothers Fine English Wines rustles up a stylish, supremely English cocktail for Kate Fairweather and Simon Stanley.

Simon Stanley and Simon Hawkins, whose best-seller is easily recognised by its distinctive dark orange custom label.

The cocktail is simplicity itself. Just three ingredients – Simon’s own blended English sparkling white wine and a locally made English vermouth containing 40 botanicals. This thoroughly sophisticated cocktail is garnished with sage from Simon’s garden.

A very English Spritz

Simon recommends approximately one part vermouth to two parts English sparkling wine. He chose a classic flute for this – a summery, English twist on a champagne cocktail.

He uses the semi-dry vermouth from Petworth’s Albourne Estate , named for the 40 botanicals it contains. It’s the perfect foil for Hawkins Brothers best-selling Brut Reserve – a biscuity, dry sparkling white wine.

Garnish with a sprig of sage. If you prefer it long, you could top up with sparkling water and a sprig of bruised fresh rosemary.
